Looking for off road but not trails

Welp, my July/August 2 month moto trip to Alaska got canceled for this year due to a heart attack.... so:
After I recover I will be looking for some nice back roads to practice my gravel and dirt road riding, as well as back country moto camping. My ride is a '12 Suzuki V-Strom DL650 so I am not looking to do trails and stuff like the KY Adventure Trail, but am looking for things like National Forest Service Roads. I've ordered all of the Motor Vehicle Use Maps for Daniel Boone National Forest and am looking forward to running around down there, but am wondering if anyone has any suggestions for other places to go - preferably with in about 4 hours or so...

That looks like the KAT Lite
Would you think a newbie on a big bike could handle that entire loop?

Newbie teenager on a TW200. She rode about 50% of it two weeks ago. Had one big spin out and one minor drop.




Some big bikes have trouble in sections (Tiger 800, two weeks ago).




KTM Adventure a few weeks ago.




Some big bikes (like a couple African Twins) bailed out before it got real bad and took easier alternative routes.




Since this Spring, I've probably ridden 95% of it. There was one section a few weeks ago, that we found to be impassible and had to turn around. We hope to go back and complete that 5% when it's a bit drier.



You don't have to be a pro to do most of it, but there are some tricky sections. The consequences for screwing up, and usually not that bad (mostly mud and clay). However, there are some rocky sections that can do damage if you're not careful, and lots of creek crossings. Sometimes deep, sometimes not. I would ALWAYS go with a buddy.

I do see that a fellow took his DL1000 on the KAT and seemed to do OK, but I'm looking to _start_ learning, not dive in with both feet at this time. I need to learn the basics.
